Canopy Coffee

General information

Canopy is an Independent Coffee Shop showcasing the best of the current roasting scene. Serving light brunch bites and classic coffee shop favourites.

Our simple idea is to promote the seasonality of coffee, and bring our community closer to the cyclical nature of coffee production. We use small micro roasters to do this, and look for partners who have excellent values in their supply chain.

Alongside our coffee we want to showcase great local handmade savoury and sweet foods that partner well with coffee. We like to drop in Gluten Free and Vegetarian options too.

Attention to detail is what makes coffee great. To create speciality coffee Farmers have to work tirelessly to produce a great crop. A Master Roaster will spend a lifetime perfecting the art of blending and roasting. Our job as the Coffee Brewer is to release all of that latent magic into a cup of something wonderful. We at Canopy take that part in the cup creation very seriously, and put precision at the heart of what we do.

From weighing every single bean that goes into each of our coffees to filtering every drop of water that extracts all of that magical essence into the cup, we make sure we play our part in creating the best coffee possible.

With years of coffee expertise behind, Jonathon Sims, our founder, has brought together a passionate team of coffee heads alongside some of the best brewing equipment available to create the perfect canopy under which to experience the best of the world's coffee scene.

We are totally independent too, which means we only showcase what we believe is the best. This, we believe, helps us stay very committed to sharing what is truly the best coffee in the world.
